Random tidbits:
The house is very interesting. I rent part of it on Airbnb. I built the house out of all recycled materials and it is still standing. It's an off-grid house. We make our own electricity. Before we were connected to the town, we just collected the water from the roof and put it in the ground in cisterns. I had goats and chickens and lots of 'back to the land' kind of activities. My daughter who lives there now just got a dozen chickens and they had their first eggs two days ago.

I think a lot of chefs are starting to utilize more vegetables- focusing on main dishes that don’t feature animal proteins. It’s good for the environment and it’s good that they are opening their eyes to different ways of composing a plate. At the same time, there is a burger battle going on. I see lots of chefs trying to recreate the classic burger. A few years ago, burgers were about adding short rib and truffles. Now, chefs are trying to make a simple burger focusing on the bun, meat, cheese and sauce.

Don Shula, he was such a strong personality. We'd always have a meeting before going out to practice. He had all the players sit by position. So when he walked into the room, he'd kind of look around and take attendance. And I remember, he would always look at you and you'd look away because he was a scary dude. I recently mentioned this to Larry Csonka, and he said 'It took me two years to stare him back in the eye.' I was the seventh round draft pick, and was like 'Oh my God, I'm going to a team that just went undefeated, so they really don't need anybody.' They brought in 25-30 rookies and ended up keeping only four of us. I was lucky to be there and going to the Superbowl and being part of that. The guys from '72 and '73 are really an exceptional group and we're still very close.

i respond to spam email as kind of a hobby or avoidance behavior. I'm not sure which. There's lots of people that want to send me money. Somebody wanted me to be a secret shopper. So, I wrote back and told them that I'm over seven feet tall and that I'm prone to violent outbursts, but I really welcome the opportunity to finally have a job. They sent a website link to apply.

I met then Senator Obama, on May 20th 2008 at an event sponsored by the Cuban American National Foundation, of which I am a member of the Board. We had a conversation about Cuba and Latin America and about Radio and TV Marti. I thought it was a casual conversation. To my surprise, I received a call from the White House in February.

I like the notion that you can make big, meaningful changes in people's lives. There are currently a half million active medical marijuana patients in the State of Florida. A few years ago there was zero. There are people having a better quality of life because of something that I helped achieve. And, in a bigger way is our success on minimum wage. People think that people in politics are cynical. Some people are, but it's tough to do this for a living and be cynical. You have to give a shit about this. The rewarding part is giving a shit.

To make the sauce, I use a VitaMix blender. I soak the cashews overnight in water, the next day I add two teaspoons of garlic powder, 1.5 teaspoons of apple cider vinegar, 3 tablespoons of nutritional yeast, and a little less than a half cup of water with 1.5 teaspoons of Himalayan salt and black pepper. I squeeze a whole lemon and mix it until it’s creamy. You can add more nutritional yeast to make it cheesier. It’s a great replacement for an Alfredo sauce. I’ll use it for the whole week.

I learned sushi through my dad. When we first came to the states, my dad would do kosher sushi catering on the weekend. Aside from his 40-hour job, he was always looking for opportunities to make extra income. My dad taught us to make our own money and not necessarily depend on him to provide. He would say, 'you work a full day' and then he would give you 150 bucks. And then say - 'those shoes that you've been asking me about, if they're $200, you only need to work two days and you'll have those shoes.' My dad taught himself how to make sushi. When he came to the states, he got a job as a busser in a restaurant that's still standing today, called Matsuri. It's one of the OG spots in Miami.

One of the things that’s so great about the market is the lessons our kids learn. At the market, our kids learn what it means to eat by seasons. Today in the grocery store, with food coming from everywhere, we somehow forget that apples are not in season all year long. For our older kids, that have been dying for the LNB guacamole, we have had to explain to them that Irma stripped off the avocados from your trees and really affected your yield. Understanding this helps them think broader about global warming and climate change and how that affects farmers and other people besides themselves.
